I know how much work goes into wedding cakes having been (literally) party to them as part of a friend-team - experiencing wide eyed horror when whisked sponges turn into versions of Goodyear’s finest, when fleet-footed rodents leave footprints in setting icing (EEEEEEK!) and when white chocolate ganache icing causes landslides rather than helping cement the construction of a three tier cake…. so I say loudly and with gusto
“Pro cake makers of the wedding world, I salute you!”
How patient and precise these people are in their creations, is an unending source of amazement - especially when it comes to crafting the most intricate sugar flowers which nearly rival the real thing for my affections. Nearly…
If your heart is set on fresh flowers for your cake, first make sure that your cake maker is happy with this, and if they are happy to do the positioning and fixing of blooms to their masterpiece - in my experience, they will usually want to make sure that flowers are arranged to their own creative satisfaction - and quite right too after all the hours they’ve put into making it look gorgeous! So you’ll need to make sure that your florist and cake maker have each others details to communicate about style details, practicalities and logistics on the day.
Like every other aspect of weddings, there are so many ways to add flowers to your cake and you can be very minimal - adding the smallest of sprigs for a simple floral touch ….
or very maximal, separating each tier of your cake with a ring of blousy blooms…
…or you can go for something in between with larger posies on as many tiers as you desire - but just make sure any flowers and foliage used are non-toxic if they’re going to be in direct contact with the cake.
If you’re going non traditional for your wedding cake and opting instead for a macaroon tower, think about having an entire tier of flowers rather than interspersing posies between macaroons, as aside from the tricky mechanics and food safety of fixing posies between these tasty morsels, when guests take out the macaroons to eat them, the posies either fall out or look ‘lost’ (For super tasty macaroons - try Birmingham-based social enterprise, Miss Macaroon.)
